Matcha Cloud Rum Sour

Instructions

In a shaker, combine:

4 cl Louve Rum

3 cl fresh lemon juice

2 cl simple syrup

½ teaspoon matcha powder

Add ice and shake well until chilled.

Strain into a chilled coupe glass.

Fluffy Cloud Foam:

In a separate shaker (without ice), shake 3 cl aquafaba vigorously for 15 seconds to create volume.

Spoon the thick, fluffy foam on top of the drink.

Lightly dust with matcha powder
